Minus 8 Dinner at Omni Bedford Springs PA

Thanks to Chef Alex Brown, F&B Manager David Noto and the entire team at the Omni Bedford Springs. We had a fantastic time, dinner was amazing! We were greeted with wine, sparkling Concord 8 and hors d'oeuvres in a colonial high-ceilinged ante-room to the kitchen, chicly decorated with cool lighting on flowing white gauzy panels from ceiling to floor. The F&B manager introduced us to chef Alex, and led us into the main kitchen, where the tasting menu was prepared in front of us as we sat around a U-shaped white and grey granite-topped dinner bar in comfy white leather chairs.

We experienced the show of chefs creating mouthwatering dishes right before us, and tasting some verjus and vinegars, cocktails, beer or wines paired with every course. The chefs answered our questions and taught us the importance of cooking with a balance of acidity, where Minus 8 vinegars and verjus come in. Then most of us had the pleasure of retiring to the gorgeous guest rooms to sleep soundly with a full belly, and others to the cozy lounge to sip a nightcap in front of the fireplace.

Join us for an enticing new dinner concept. Chefs David Noto, Alex Brown and Minus 8 proprietors present a five course tasting menu and paired drinks featuring and built around the company's gourmet vinegars.

Minus 8 is named for the freezing conditions in which the grapes are hand-picked and pressed on their family's vineyard in Canada. The vinegars are traditionally slow fermented from their Ice Wine, Late Harvest Gewurztraminer, Riesling, and Concord grapes. Each course of the dinner will include a taste of the Minus 8 product used in the recipe. The dinner includes the first of the 2015 Verjus production. Included in the dinner package is a small bottle of Minus 8 vinegar to take home to enhance your own recipes. $65++ for food only, $100++ for food with beverage pairings.
