Our new vinegar is called Veget8. We are doing trial batches with different fruits and vegetables, making vinegars that taste like vegetables. We made a small batch of it for release in December using Cabernet Franc grapes and Roma tomatoes. Certain types of grapes, like Cabernet Franc, can make juice or wines that taste vegetative, like leafy green vegetables or green beans for example. We coerced our grapes to taste like vegetables using some very shady viticulture. We made red icewine from those grapes, and blended it with vinegar that we made from gorgeous Roma tomatoes.
We are also doing batches with carrots, peppers, celery, beets and other vegetables. This is the first release of a series...
