Green Peppercorn and Thyme Dressing
A piquant dressing with a strong herby flavour. Just the thing to complement beetroot, venison, game, goat's cheese or smoked chicken.
10 green peppercorns, tinned or in a jar
1/2 teaspoon thyme leaves, finely chopped
6 tablespoons olive oil
2 tablespoons of Minus 8 White Verjus
1 teaspoon Dijon mustard
Put all the ingredients in a blender and mix until the consistency is smooth. Season with salt and pepper to taste.
