Great Combination for Lunch!!!

Suppli Al Telefono with a Vegetable salad and Minus 8 Vinegar
3 tablespoons finely chopped fresh parsley
1 quantity Porcini and Parmesan Risotto
7 ounces mozzarella cheese, cut into 20 cubes
2 eggs, beaten
1¼ cups dried plain bread crumbs
corn or vegetable oil for dip frying
fresh herbs, to garnish
1 Stir the parsley into the risotto, cool then chill until firm. Divide into 20 portions and shape each into a ball. Press a cube of cheese into each ball of riceland reshape nicely. Coat the rice balls in the beaten egg, the the bread crumbs, and chill again for 30 minutes to set the coating.
2 Heat the oil for the deep frying to 350F. Cook about 5 fritters at a timer 3-5 minutes, until golden brown and crisp. Drain the fritters on paper towels and keep warm on a uncovered plate in a warm ovens that the coating remains crisp. Serve immediately. Add a fresh tomato, red onion and cucumber salad, drizzled with Minus 8 Vinegar. Great combination.
