Our maple syrup arrived. Our friends in Quebec take the time to make if just how we need it. We are going to make Maple 8 Vinegar and Maple Brix Verjus. The maple syrup is going to get fermented into vinegar, rather than just adding maple syrup to some existing vinegar. Then the vinegar is going to be aged in oak barrels for some extra dimension and flavour integration. 2014 Maple Brix Verjus is available now, Maple 8 Vinegar will be ready in several months.
