Paul’s Club Cocktail with 8 Brix White Verjus

Ingredients:

1 pound of concord grapes

1 Cup 8 Brix White Verjus

2 ounces gin

½ ounce simple syrup

¼ ounce pastis

Directions:

  1. Combine and Crush grapes and the 8 Brix Verjus in a nonreactive container, mixing every once in a while.  Cover for a day.  Strain, discarding the grapes.  Reserve 1 ounce of liquid.  Refrigerate the rest in a clean jar for up to a month.  (Add simple syrup and water to taste for the nonalcoholic shrub.)
  2. Stir gin, the reserve grape liquid and simple syrup with ice and strain into a cocktail glass.  Pour in pastis.
