Soups & Stews

Like with salt, vinegar or verjus should be used to adjust the taste of a dish.  As a finishing step, add a bit of vinegar or verjus of your choice to your soup or stew.  You will find that the dish does not taste like the vinegar or verjus, but rather that the overall flavour has been enhanced.
